Collaborations

After two or three years of discussing the possibility of creating a beer together, Doug Hurst of Chicago’s Metropolitan Brewing and I finally arranged to brew together in 2010. I had so much fun that day that I went home and called every brewer I knew and asked if I could make a beer with them. Six years and many brew days later, collaborating on beers has become a large part of who I am in my career. This page is devoted to the many projects I have been gifted to work on.

  • Anaphylaxis (2012) – Belgian red ale, a take on Carrot Cake. Belgian Ale brewed with carrots, sweet potatoes, cinnamon, nutmeg, clove and allspice and Belgian candi syrup.
  • ChocoTSuris (2013) – American porter, A take on Black Forest and German chocolate cake with a glass of milk. Mick Klug tart cherries, toasted coconut, coconut water, and milk sugar added to the brew. Cocoa nibs added to the fermenter.

  • Slapping Violets (2014) – kolsch with lemon basil and fresh blueberries

  • Brutus (2014) – spelt sour saison aged in bourbon barrels and cabernet sauvignon barrels, then blended back together

Two Brothers Artisan Brewing – Warrenville, IL

  • Testudo (2012) – biere de mars with lemongrass and green tea, Brettanomyces
  • Cabinet of Curiosities (for Filed Museum) (2014, 2015) – white IPA with pink peppercorns, toasted coriander and orange peel

  • Sweet 73 (2012) Cyser with honey from City Provisions bee hive and aged in Jack Daniels barrels
