Chilled Cucumber & Poblano Soup

serves 6 – 8 people

What you need:
3 large cucumbers, peeled
2 large poblano peppers
1 jalapeno
2 scallions
1 cloves of garlic
1 ½ tbsp fresh mint
½ tbsp fresh chives, chopped
½ tbsp fresh dill
1 tbsp extra virgin olive oil
1 tbsp white vinegar
1.5 cups yogurt
1.5 cups sour cream
salt and pepper to taste

How to make it work:
In a food processor, mix cucumbers, peppers, garlic, jalapenos, garlic, and fresh herbs. If needed, do in two batches

In a large mixing bowl, mix the rest of the ingredients with the cucumber mixture

Working in batches, puree the entire mix in a blender

Chill for at least two hours before service. Garnish with chopped mint or chives
