This is a great recipe to speak to someone’s heart and stomach. I use the mushrooms for binding to cut down on the breading. Use more of the adobo peppers with the ketchup if you want a bit more heat.
Serves about 10 people
What you need:
5 lbs ground turkey
½ cup vegetable oil
1 cup mushrooms, finely chopped
1 onion, finely chopped
¼ cup each – fresh rosemary and oregano, finely chopped
1 tablespoon garlic, finely chopped
½ cup bread crumbs
¼ cup soy sauce
¼ cup Dijon mustard
1 small can of chipotle in adobo
24 oz ketchup
salt and pepper
How to make it work:
Make the chipotle ketchup.
Combine finely chopped chipotles in adobo sauce from a can with ketchup and mix well.
Sautee onions and garlic until soft, but not browned. Let cool.
Combine all ingredients together and mix well.
Place in well greased bread pan and spread Chipotle Ketchup over the top, reserving some for later. Cover with foil.
Bake at 350 degrees until juices run clear (about 45-60min). removing the foil during the last 15 min of baking.
CHEF NOTE: You can also use this mix to make burgers!
